Whenever someone in my house is hungry, my answer is always hummus ... and sourdough ... lucky they go so well together!

What Exactly Is Hummus?

Hummus is a versatile Middle Eastern dip or spread made from blended cooked chickpeas (garbanzo beans), tahini (ground sesame seeds), lemon juice, and garlic.

It boasts a creamy texture and a distinct, nutty flavor. Often served with pita bread or as a dip for vegetables, hummus has become a popular and nutritious dish enjoyed worldwide.

Should You Use Raw Garlic or Roasted Garlic When Making Hummus?

You can use either raw garlic or roasted garlic when making this simple hummus recipe without tahini. Raw garlic will give you a spicier garlic flavor,  whereas roasted garlic provides a more mellow, almost sweeter flavor.

I recommend using fresh garlic for this recipe because you want a fresh garlic flavor, rather than an old, been in the cupboard too long garlic flavor. I find that if you're using roasted garlic, you'll need to double the garlic cloves in order to get the flavor profile you need for hummus.

If you are going to roast some garlic cloves, I recommend making extra so you can also make this roasted garlic and rosemary sourdough bread.

How To Make This Easy Hummus Recipe without Tahini

The main ingredient in this hummus recipe is chickpeas. I just use canned chickpeas because it's so easy, but if you want to cook your own chickpeas you can of course do that.

Canned chickpeas are such an inexpensive ingredient and one that's super easy to have on hand! Honestly, hummus is my go to when I have to take a dish somewhere - it takes seconds to throw together and can be paired with fresh sourdough or vegetable sticks for a take along everyone will love!

Before you starter - drain your can of chickpeas (can of garbanzo beans) and peel your garlic.

Add all ingredients to a food processor and blend until smooth (this will take around one minute). If the mixture seems lumpy or dry, add a little extra olive oil until you get the desired consistency. I love a smooth hummus, but if you like a chunkier hummus then feel free to not blend it so much. 

The Greek yogurt can also help with this if you are going to use it. Adding Greek yogurt will give you the creamiest hummus ever and boost the protein content of this chickpea dip too!

Transfer to a serving bowl and drizzle in more olive oil (I love using chilli oil for this) and sprinkle with cumin seeds or black sesame seeds.

Easy Hummus Flavor Variations

Roasted Vegetable Hummus - you can literally use any roasted vegetables you like to make this delicious roasted vegetable hummus! I love using roasted carrots or pumpkin.

Roasted Garlic Hummus - to use roasted garlic, double the garlic cloves to ensure you get enough garlic flavor.

Lemon & Dill Hummus - for a stronger lemon flavor, add the zest of a lemon and few sprigs of fresh dill to this easy hummus recipe for a zesty variation on traditional hummus dip.

Chilli Hummus - add some fresh chilli or red pepper flakes to your hummus for a spicy twist. Topping your hummus with chilli oil will also give you a mellow warmth too!

Beetroot Hummus - you can add roasted beetroot or even some raw beetroot to this hummus recipe. I usually add about half a raw beetroot for some serious color and flavor! Great to use up excess beetroot from the garden.

How To Store + Freeze?

This easy hummus without tahini recipe can be stored in the fridge for up to 5 days, as long as it's stored in an air tight container. Fresh hummus lasts in the fridge as long as it's sealed. It has quite a strong smell because of the raw garlic, so you want to make sure you don't leave it uncovered in the fridge.

Hummus freezes really well too! Freeze in an air tight plastic container or a glass jar. It will stay good for up to 2 months. When you want to use it, thaw at room temp and then give it a good stir when you want to use it.

    I have never liked store bought hummus, but have decided to finally make it homemade. I roughly followed this recipe and added water to thin it out and the flavor is amazing!! I can’t wait to try the other flavors you mentioned.
