Hands up if you have a sourdough starter and backyard chickens? Then you might be like me and end up with jars of starter to use and baskets of eggs that you just have to find something to do with!

Why Sourdough Starter and Eggs?
I don't think there's any coincidence to having a sourdough starter and backyard chickens. Sourdough starter is often the one thing that starts people off to wanting a full blown homestead!
I live on a small farm, so we have lots of different animals, grow our own veggies, have chickens and of course I make all of our bread and baked goods using my trusty homemade sourdough starter (you can find my recipe for making a sourdough starter here).
One thing I love about sourdough starter is that it has this uncanny way of working its way into almost everything we do (you can add sourdough discard to almost any recipe). From baking amazing sourdough bread and of course don't forget the sourdough discard recipes - to fertilising my plants with sourdough starter and even feeding discard to my chickens! My chickens absolutely love eating sourdough discard.
So I felt it was kind of fitting to put together a collection of sourdough recipes that use lots of eggs. In a cycle of life kind of way, my chickens actually eat lots of sourdough discard, as well as all our food scraps, so sometimes they will eat the leftovers of these egg based sourdough recipes.

Now I'm totally of the opinion that poached eggs on homemade sourdough bread counts as dinner (especially if you use homemade butter on your toast) ... but if you're looking for something a little more, then you're going to love these recipes!
