In a large mixing bowl, whisk together all of the dry ingredients.
To Make Pancake Batter
Use Immediately - To make the dry mix into sourdough pancake batter, whisk together 350 grams of sourdough pancake mix with 350 grams of water until well combined. You can use the pancake batter immediately.Ferment Overnight - To ferment the batter overnight, add 350 grams of pancake mix with 400 grams of water. The extra water is necessary because the mixture will thicken as it ferment. Whisk the pancake batter until smooth and place into the fridge overnight. When you're ready to use the batter, give it another whisk and cook as normal.

Egg Powder - If you want to add extra richness to your pancake batter you can add dried egg powder to the mixture. I recommend 40 grams of dried egg powder to the list of ingredients above. This is the equivalent of 3 whole eggs. Increase the water to 375 grams when making the pancake batter.Buttermilk Powder - I've chosen to use buttermilk powder but this recipe also works with skim or whole milk powder as well.Servings - The ingredients above is enough to make 1050 grams of sourdough pancake mix which is 3 batches of pancakes. Each batch of 350 grams, when mixed with 350 grams of water, makes approximately 10 pancakes. The nutritional values shown are for 2 pancakes.
