I have a huge jar of this sourdough pancake mix sitting proudly on my kitchen counter! I refill it each week to give us a simple sourdough breakfast that even my kids can pull together!

  • All-purpose Flour
  • Granulated Sugar
  • Dried Sourdough Starter Powder – this is what makes this dry sourdough pancake mix so special! See my detailed notes further down to make sure you get the texture of the dried sourdough starter powder right.
  • Buttermilk Powder – You can use plain whole milk powder if you prefer, but buttermilk powder gives this mix a silky smooth texture with a richness you just won’t be able to resist. The acidity in buttermilk powder also makes the pancakes extra fluffy when it mixes with the baking soda! I highly recommend using buttermilk powder if it’s available to you.
  • Baking Powder and Baking Soda
  • Salt

Kate’s Pro Tip

Dried Sourdough Starter

I create dried sourdough starter powder by dehydrating my active sourdough starter. It’s really important that your dried sourdough starter powder is ground to a fine powder. If it’s too coarse, it will be crunchy when you mix the pancake mix with water. For the best results, run your dried sourdough starter through a food processor to make sure it is blitzed to a fine powder. Dried sourdough starter is also really useful for stopping sourdough from sticking to bannetons.

How To Dehydrate Sourdough Starter

How To Make Homemade Sourdough Pancake Mix

This homemade sourdough pancake mix is super easy to put together! All you need to do is add all the ingredients to a large bowl and whisk together so that everything is well distributed. You can easily double or even triple the mixture to make a bulk batch. I love doing this to make school mornings easy!

To make pancakes using the mix, all you need to do is mix 350 grams of sourdough pancake mix with 350 grams of water. Whisk together until smooth. You can make the sourdough pancakes straight away! Cook the pancakes in a buttered skillet over medium heat.

If you do have a little extra time, leaving the homemade sourdough pancake mix to sit for around 30 minutes after mixing with water will make the batter even better!

Alternate Cooking Methods

If you don’t want to cook these pancakes in a skillet, you can pour the batter into a slice pan (either greased with butter or lined with parchment paper). Bake in the oven for around 20 – 25 minutes at 220ºC (430ºF) or until the pancake sheet is golden brown and puffy.

You can also pour the batter into mini muffin pans and top with berries. Bake for 10 – 15 minutes at 220ºC (430ºF) to create little sourdough pancake bites.

Fermenting Overnight

This homemade sourdough pancake mix can be fermented overnight. I love mixing the batter before bed and fermenting overnight so that we wake up to delicious fermented sourdough pancakes for breakfast.

Add 350 grams of homemade sourdough pancake mix with 400 grams of water, whisk together and place into the fridge to ferment overnight. I add a little extra water when fermenting the mixture because it thickens as it ferments.

Kate’s Recipe Testing Notes

I tested this recipe so many times, it’s not even funny! Luckily my kids like pancakes! I tested this recipe with dried egg powder, buttermilk powder, milk powder, no milk products, no egg products, egg replacers – you name it, I tried it! Let’s just say, we ate a lot of pancakes while I perfected this sourdough pancake mix! But doing this meant that I was able to create the absolute best dry sourdough pancake mix there is! It’s a recipe that you can make in bulk and have in the pantry when you need pancakes in a flash!

Once I perfected the mix, I then tested it multiple times to ensure that it works with equal amounts of mix and water. I wanted this mix to be super easy to use, so only having to remember one measurement is GOLD!

Level Up Your Pancake Mix

I love adding different flavors to my pancake mix, especially if I’m gifting it! Here are a few ideas for adding a little something special to your pancake mix, or even creating a seasonal favorite for your family.

Some fo the flavors I love to create are:

  • Vanilla Bean – Add 20 grams of vanilla bean powder to the other dry ingredients. I’ve used a natural vanilla powder, not a vanilla sugar, so it’s very concentrated and you only need a little bit.
  • Gingerbread – Add 3 grams of cinnamon (1 tsp), 2 grams of ginger (1 tsp) and half a teaspoon of allspice to the dry ingredients. Add 20 grams of molasses along with the water when you make the pancake batter.
  • Chocolate – Add 30 grams of cocoa powder to the dry ingredients. You can also add 100 grams of chocolate chips to really elevate your mix. This is a great idea when gifting.
  • Strawberries and Cream – Add 15 to 30 grams of crushed freeze-dried strawberries, along with 10 grams of vanilla bean powder to the other dried ingredients.

Packaging Homemade Sourdough Pancake Mix

I’ve been using these bakery bags with windows to gift my homemade sourdough pancake mix. They are bags I actually use for gifting my sourdough chocolate chip cookies and sourdough granola, but they also work really well for this mix too!

Alternatively, you can use these resealable brown paper bags with windows.

I love adding 700 grams of homemade sourdough pancake mix to a bag when I’m gifting. This is enough to make 2 batches of pancakes (with around 10 pancakes in each batch).

I create simple labels on my computer and just print them on regular white paper and glue them to the front. It gives them a lovely look when I gift to family and friends. I also add instructions to the back of the pack so people receiving the mix know how to much water to add.

How To Store Long Term

Pantry – This mix can be stored in a glass jar or air tight plastic container for up to 6 months. It does contain dried milk products, so make sure that the container you put it in is clean and dry.

Freezer – You can place the dried sourdough pancake mixture into resealable plastic bags and store in the freezer for up to one year.

Sourdough Pancake Mix

A dry pancake mix with a sourdough twist! This simple sourdough pancake mix can be made and stored in the pantry for busy mornings.

Ingredients 

  • 630 g All-purpose Flour
  • 135 g Granulated Sugar
  • 100 g Sourdough Starter, (Dried Sourdough Starter Powder)
  • 100 g Buttermilk Powder
  • 50 g Baking Powder
  • 25 g Baking Soda
  • 10 g Salt

Instructions 

To Make Dry Mix

  • In a large mixing bowl, whisk together all of the dry ingredients.

To Make Pancake Batter

  • Use Immediately – To make the dry mix into sourdough pancake batter, whisk together 350 grams of sourdough pancake mix with 350 grams of water until well combined. You can use the pancake batter immediately.
    Ferment Overnight – To ferment the batter overnight, add 350 grams of pancake mix with 400 grams of water. The extra water is necessary because the mixture will thicken as it ferment. Whisk the pancake batter until smooth and place into the fridge overnight. When you're ready to use the batter, give it another whisk and cook as normal.

Notes

Egg Powder – If you want to add extra richness to your pancake batter you can add dried egg powder to the mixture. I recommend 40 grams of dried egg powder to the list of ingredients above. This is the equivalent of 3 whole eggs. Increase the water to 375 grams when making the pancake batter.
Buttermilk Powder – I’ve chosen to use buttermilk powder but this recipe also works with skim or whole milk powder as well.
Servings – The ingredients above is enough to make 1050 grams of sourdough pancake mix which is 3 batches of pancakes. Each batch of 350 grams, when mixed with 350 grams of water, makes approximately 10 pancakes. The nutritional values shown are for 2 pancakes.
