If you're looking for the best sourdough pumpkin recipes, then you've come to the right place. Some people roll their eyes at pumpkin spice and all things nice ... I am not one of those people!
I absolutely LOVE pumpkin recipes, so it seemed only fitting that I put together a collection of sourdough pumpkin recipes for my fellow pumpkin lovers!

Pumpkin Sourdough Baking Essentials
If you want to make sure you're organised for baking with your sourdough starter and pumpkin, here are the things I recommend to have on hand:
- Digital Kitchen Scale
- Muffin Tin (6 or 12 hole)
- Dutch Oven
- Cake Pans
- Pumpkin Pie Spice (I've included a recipe further down)
- Pumpkin Puree (canned or homemade)
- Brown Sugar (try to have dark and light on hand or see further down for my brown sugar hack)
Grab Your Sourdough Starter
One thing all of these recipes have in common is of course they all contain some sourdough starter. If you don't have a sourdough starter, you'll find detailed instructions for homemade sourdough starter here.
Some of these pumpkin sourdough recipes utilise active sourdough starter, while others are more tailored to sourdough starter discard (you can read more about why it's important to discard your sourdough starter here).
Remember that you can always use active sourdough starter in any recipe. But if you're using discard, it will generally require an additional leavening agent like baking powder, baking soda or commercial yeast. It's always a good idea to have these on hand if you plan on baking a lot of sourdough discard recipes over the pumpkin season.

How To Make Pumpkin Spice
Many of the recipes above call for using pumpkin spice. If you can't buy pumpkin spice where you live, or you've simply run out, you can use this recipe to make your own. It's so easy! Just mix the spices below together in a bowl and you've got pumpkin spice. Super easy!
- 3 tablespoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
The recipe above will make around 5 tablespoons of pumpkin pie spice and can be stored in a glass jar for many months, although with all this pumpkin flavored sourdough baking, it won't last long!!
Pumpkin Puree
All of the recipes in this collection have been made using homemade pumpkin puree, for no other reason than canned pumpkin puree is not a thing where I live. Just remember, use pumpkin puree not pumpkin pie filling.

Dark Brown Sugar or Light Brown Sugar?
Many of these sourdough pumpkin recipes call for brown sugar. Generally light brown sugar is fine and will create a nice flavor profile.
There are times however that dark brown sugar is better. If a recipe calls for dark brown sugar, but you only have light, add a little molasses to the light brown sugar to turn it into dark brown sugar. This is explained in this post about making sourdough blondies.
