There’s nothing better than fresh sourdough bread in the winter time. But cold weather can make it tricky to make your sourdough starter thrive because it prefers warmer temperatures. It can also play havoc with your favorite sourdough bread recipe in that a colder ambient temperature can make bulk fermentation take forever!

Here are my best tips for baking better sourdough in the colder months:

  • Keep your active sourdough starter warm – Make sure you’re keeping your sourdough starter nice and toasty. I’ve created a list of 20+ ideas for keeping sourdough starter warm here (and most of them are free!).
  • Double the amount of starter – the more starter you use the more quickly your dough will ferment. You can read about how this works here.
  • Use warm water when you mix up your dough – Not hot, just warm – nothing hotter than 37C. This will keep your yeastie beasties toasty warm and ready to raise bread dough!
  • Consider using a proofing box to bulk ferment your dough – A proofing box will ensure your dough stays at the right temperature for the entire bulk ferment and allow you to create a warmer environment than your home. This proofing box is incredibly efficient and folds flat when not in use.
